Menu Plan Monday


So I have fallen off track AGAIN...story of my life! So one way to help me stay on track is to plan ahead, yes we have all heard it, but it's true, and it works!! So here's my menu plan for the week.

What I Ate, August 20

Here's what I ate today on Weight Watchers!

BREAKFAST


Fat-Free Raspberry White chocolate mocha (5 PP)

LUNCH


Carne Asada Pita: Thin beef steak - 2 oz (2 PP), sliced onions and mushrooms (0 PP), 1 Laughing Cow cheese wedge (1 PP) in 1/2 a whole wheat Flat Bread pita (3 PP) seasoned with Carne Asada seasoning with grapes (0 PP)

SNACK


Zone Perfect Bar, Chocolate Peanut Butter (5 PP)

DINNER


My version of a chili dog! 1 slice Sara Lee Delightful 100% Whole Wheat bread (1 PP), 2 Hebrew National Fat-Free hot dogs (2 PP), 1/2 cup Fat-Free chili with beans (2 PP), 1/2-3/4 oz shredded Colby jack cheese (2 PP), and 2 tablespoons light sour cream (1 PP)

DESSERT


We had movie night in our house tonight! I bag 100 calorie popcorn (3 PP)


Kids went to bed, time for some mommy time!! A cup of Chamomile tea with a teaspoon honey (1 PP) and Weight Watchers Caramels (3 PP)

What I Ate Day 2


BREAKFAST


Tea with a tsp of honey (1 PP)


PB & J Smoothie (6 PP)

LUNCH


Leftovers from last night (7 PP)

SNACK


Cottage Doubles with Strawberry (3 PP) and a Pink Lady apple with PB2 (1 PP)

DINNER


Jenni O Lean Turkey Kielbasa (4 PP) sauteed cabbage (0 PP) grilled zucchini (0 PP)

DESSERT


Light & Fit Greek Yogurt - Key Lime (2 PP) and Dole Dark Chocolate banana dippers (2 PP)

MELT DOWN
I had a mini melt down today at lunch time! I was making my husband and kids their lunch and was starving...so I did like I used to do, and started munching as I made their lunch! But I tracked it all :)


2 slices Velveeta Slices (3 PP) and 1/2 oz Buddig Ham (which sadly I don't even like! 1 PP)

Crock-Pot Hawaiian Chicken


Tonight we decided to try a new recipe. I found this over at Mommy's Fabulous Finds.

Crock-Pot Pineapple Chicken
Serves 6 - 7 points plus

3 or 4 large chicken breasts
1 cup pure cane sugar
1/4 cup soy sauce
1/2 cup pineapple juice (use the juice from the pineapple chunks)
1/2 cup ketchup
2 tbsp balsamic vinegar
1 tbsp mustard
16 oz canned pineapple (tidbits or crushed)

Combine sugar, soy sauce, pineapple juice, ketchup, vinegar and mustard. Add chicken to the crock-pot and top with sauce and pineapple. Cook on low 7-8 hours or high for 4 hours.

3 or 4 boneless skinless chicken breasts (I used 3 pretty big ones)
1 cup pure cane sugar
1/4 cup soy sauce 
1/2 cup pineapple juice (use the juice from your pineapple chunks, I ended up with 3/4 of a cup, so just used it all)
1/2 cup ketchup
2 tbsp balsamic vinegar
1 tbsp mustard
16 oz can pineapple (tidbits or crushed)

Combine sugar, soy sauce, pineapple juice, ketchup, vinegar and mustard together in a small bowl. Add chicken breasts to the crock-pot, then top with sauce mix and pineapple. Cook on low for 7-8 hours or on high for 4 hours.

It's DAY #1!!
I'm back on Weight Watchers. So I started Weight Watcher Mom as a way to keep myself accountable and motivated. I hope you enjoy!


BREAKFAST


I started my day off with a cup of tea and a teaspoon of honey (1 Points Plus)


For Breakfast I had a fat-free white chocolate vanilla bean mocha (5 Points Plus) and a banana (0 points plus)

LUNCH


Progresso Light Soup, Chicken & Dumpling (4 points plus), Cottage Doubles, Blueberry (2 points plus), and 2 Glutino Table crackers (3 points plus)

SNACKS


Chipins (4 points plus) and blueberries (0 points plus)


Iced Tea (0 points plus) and a donut peach (0 points plus)

DINNER


Crock-pot Pineapple Chicken (7 points plus), Rice sides - cheddar broccoli (3 points plus), grilled zucchini (0 points plus)

DESSERT


Light & Fit Orange Cream (2 points plus) and Banana Dippers (2 points plus)

I made it through my first day!!
